Hollandaise Sauce - cooking recipe
Ingredients

3 egg yolks
1/4 c water
2 T lemon juice
1/2 cold butter, cut into chunks
1/8 t salt
1/8 t paprika
dash pepper
Preparation

Whisk egg yolks, water and lemon juice together in a small saucepan.
Cook and stir over low heat until mixture bubbles around the edges, about 20 minutes. add cold butter chunks to mixture one at a time, whisking after each addition until butter is incorporated into mixture.
Stir in seasonings.
Serve immediately. Yield:
1 cup.
