Pineapple Upside-Down Cake - cooking recipe

Ingredients
    1 small ripe pineapple
    3 Tbsp. margarine, melted and divided
    1/4 c. firmly packed brown sugar
    1/4 c. unsweetened pineapple juice
    2 Tbsp. finely chopped walnuts
    1 egg
    1/2 c. sugar
    1 1/2 c. sifted cake flour
    2 tsp. baking powder
    1/4 tsp. salt
    1/2 c. skim milk
    2 tsp. vanilla extract
Preparation
    Peel, core and cut pineapple crosswise into 1/2-inch thick slices.
    Set 5 slices aside, reserving remaining pineapple for another use.
    Combine 1 tablespoon margarine and brown sugar in a small saucepan.
    Stir well.
    Place over medium heat and cook 1 minute.
    Add pineapple juice.
    Cook an additional minute, stirring constantly.
    Spread evenly into an 8-inch round cake pan.
    Sprinkle walnuts around outside edge of pan.
    Arrange pineapple slices in a single layer over brown sugar mixture.
    Set aside.
