St. Petersburg Pork Chops(Russia) - cooking recipe

Ingredients
    6-8 pork chops
    3/4 cup mushrooms, chopped
    6 roma tomatoes, sliced
    1 garlic clove minced
    1/4 cup butter
    1 tsp. paprika
    salt and pepper to taste
Preparation
    Tenderize pork chops lightly with a mallet and sprinkle with salt and pepper. Melt all the butter but 2 Tbsp. in a large skillet and cook the pork chops until done. Remove to a serving dish. Place mushrooms in a small skillet with remaining butter and fry for 2-3 minutes. Add tomatoes and garlic, cook 2-3 more minutes. Place mushroom and tomato mix and any remaining butter on each chop. Serve hot. Serves 6.
