Apricot Cream - cooking recipe
Ingredients

2 c. sweetened, cooked, dried apricots
1 orange
1 Tbsp. plain gelatin
2 Tbsp. cold water
1/2 c. granulated sugar
dash of salt
1 c. whipping cream (may use Cool Whip)
Preparation

Drain and chop cooked apricots, reserving syrup.
Grate 1 teaspoon of rind from orange peel and dice orange.
Soften gelatin in cold water.
Heat 3/4 cup apricot syrup, sugar and salt on low heat.
Dissolve gelatin in this mixture.
Add fruits and rind. Cool until slightly thickened.
Whip the cream and fold into fruit mixture.
Cool until firm.
Makes 4 servings.
