Coffee Pecan Cake - cooking recipe

Ingredients
    3/4 c. light brown sugar
    4 egg yolks, separated
    1 1/3 c. ground pecans
    1 Tbsp. dried white bread crumbs
    1 Tbsp. strong coffee or Espresso
    3 egg whites
    1 1/4 c. whipping cream
    1 Tbsp. strong coffee
    3 to 4 Tbsp. maple syrup
    2 (1 oz.) sq. semi-sweet chocolate
    pecan halves, chocolate coffee beans and drizzled melted chocolate (garnish)
Preparation
    In a bowl, beat sugar and egg yolks until light.
    Gently fold in nuts and bread crumbs, then stir in coffee.
    In another bowl, whisk egg whites until soft peaks form; fold into mixture.
    Pour into round cake form and bake in a preheated oven at 350\u00b0 for 25 to 30 minutes until well risen and firm to touch.
    Cool on wire rack.
