Marinated Carrots - cooking recipe
Ingredients

2 lb. carrots, sliced diagonally 1/8 to 1/4-inch thick
1 medium onion, thinly sliced and separated into rings
1 medium green pepper, cut into thin strips
1/2 (10 oz.) can tomato soup
1/2 c. cooking oil
1/3 c. cider vinegar
1/4 c. sugar
1/2 tsp. salt
1/2 tsp. dried mustard
1/4 tsp. pepper
Preparation

Place carrots and 2 tablespoons of water in a 2-quart microwave-safe utensil.
Cover with Glad wrap and microwave at Full power for 10 minutes or until carrots are tender, but crisp. Let stand covered for 10 to 15 minutes.
Drain and cool.
Add onion rings and green pepper strips.
