Potato Medley - cooking recipe

Ingredients
    1 large yam or sweet potato
    1/2 large onion
    finely chopped fresh ginger
    1 to 2 Tbsp. canola or olive oil
    2 large baking potatoes or others of equal size
    1 to 2 cloves garlic, minced or finely chopped
Preparation
    This recipe is a hearty mixture which includes an important vegetable, namely yams, that should be more frequently used since it is one of the few easily available and inexpensive yellow vegetables in the American diet.
    When mixed with the most popular vegetable, white potatoes, it becomes an appealing accompaniment to a variety of proteins and salads.
