Rhubarb Coffee Cake - cooking recipe
Ingredients

1 1/2 c. brown sugar
1/2 c. butter
1 egg
2 c. flour
1/2 tsp. baking soda
1/2 tsp. salt
1 c. buttermilk or sour milk
1 1/2 tsp. vanilla
2 c. cut up or diced rhubarb
1/2 c. chopped nuts (optional)
1/2 c. granulated sugar
1 tsp. cinnamon
Preparation

Cream brown sugar and butter.
Add egg and mix well.
Add sifted dry ingredients alternately with combined buttermilk and vanilla.
Stir in rhubarb.
Stir in nuts if being used.
Pour into greased 8 x 12-inch or 9 x 14-inch baking pan.
Sprinkle with 1/2 cup granulated sugar mixed with cinnamon.
Bake in 350\u00b0 oven for 35 to 40 minutes.
