Marinated Turkey - Barley - Vegetable Salad - cooking recipe

Ingredients
    1/2 c. pearl barley or 3/4 c. quick-cooking barley
    1 c. frozen peas, thawed
    4 oz. fully cooked turkey breast, cubed
    1/2 c. coarsely chopped sweet red and/or yellow pepper
    2 green onions, sliced
    2 Tbsp. olive oil or salad oil
    1/2 tsp. finely shredded lime peel
    2 Tbsp. lime juice
    1/4 tsp. salt
    1/4 tsp. poultry seasoning
    dash of ground red pepper
Preparation
    Cook barley according to package directions; drain and rinse. In a large mixing bowl, combine cooked barley, peas, turkey, sweet pepper and onions.
