Aloha Sweet Potatoes - cooking recipe

Ingredients
    2 to 3 sweet potatoes
    1/4 c. pineapple or pineapple-apricot preserves
    1 Tbsp. butter or margarine
Preparation
    Boil sweet potatoes in their jackets until just tender, approximately 20 minutes.
    Do not overcook.
    Let cool, then peel and cut into 1/2-inch thick slices.
    In a large skillet, melt preserves and butter.
    Add sweet potatoes to skillet.
    Cook gently, tossing lightly until potatoes are glazed.
    Excellent with Kahlua Pork.
    Serves 4 to 6.
