Fried Eggplant - cooking recipe

Ingredients
    1 medium eggplant
    salt
    1 egg
    4 Tbsp. milk
    cracker crumbs
Preparation
    Peel and slice eggplant 1/2-inch thick.
    Salt each slice and place on top of each other on plate.
    Weight with a heavy plate. Drain when ready to use and dry each piece.
    Beat the egg.
    Add milk.
    Dip each slice in egg and then in crumbs.
    Fry brown in deep fat.
    Serve while crisp and hot.
    With a salad, this makes a cheap meatless meal.
