Ingredients

7 c. ripe cantaloupe pulp
2 c. sugar
2 Tbsp. lemon juice
1 tsp. grated lemon rind
Preparation

Place cantaloupe in a large saucepan.
Bring to a boil over low heat.
Boil, stirring occasionally, until smooth.
Stir in sugar, lemon juice and rind.
Continue boiling for 15 to 20 minutes.
Spoon, while hot, into hot sterilized jars.
Seal with paraffin.
