Cucumber Salad I - cooking recipe

Ingredients
    2 or 3 fresh cucumbers, sliced very thin
    salt
    1 Tbsp. olive oil
    1 Tbsp. vinegar
    pepper to taste
    pinch of sugar (optional)
Preparation
    In a bowl arrange the sliced cucumbers, salting them in layers. Cover with a saucer and weigh down with something heavy.
    Let stand for several hours or until juices run out.
    Pour off cucumber juice, which will take most of salt.
    Combine all other ingredients and add to the cucumbers.
    Mix and chill.
    Makes 4 to 6 servings.
