Ingredients

2 c. self-rising flour
2 eggs
milk as needed (to achieve desired texture)
3/4 c. applesauce
1/2 tsp. cinnamon
3/4 c. blueberries
Preparation

Using mixer on lowest setting, combine flour, eggs, milk and applesauce.
Once all the ingredients are moist, increase speed of mixer.
Add cinnamon and mix thoroughly.
Add blueberries last and hand-stir only, to ensure berries are intact.
Spray frying surface with Pam and cook slowly to ensure centers are well cooked. Topping is your choice.
