Rhubarb Crunch - cooking recipe
Ingredients

4 c. diced, fresh rhubarb
1 c. sifted flour
3/4 c. quick cooking rolled oats
1 c. light brown sugar (firmly packed)
1/2 c. melted butter
1 tsp. ground cinnamon
1 c. granulated sugar
2 Tbsp. cornstarch
1 c. water
1 tsp. vanilla
Preparation

Combine flour, oats, brown sugar, butter and cinnamon in a bowl.
Mix until crumbly and press half in greased 9-inch pan. Cover with rhubarb.
Combine granulated sugar, cornstarch, water and vanilla in a small saucepan and cook, stirring until thickened and clear.
Pour over rhubarb and top with remaining crumbs. Bake in a preheated 350\u00b0 oven for 1 hour.
Cut in squares and serve warm, plain or topped with whipped cream or ice cream. Serves 8.
