Basic White Sauce - cooking recipe
Ingredients

3 Tbsp. butter
2 c. milk, scalded
1/4 tsp. white pepper
3 Tbsp. flour
1/2 tsp. salt
1 or 2 egg yolks (optional)
Preparation

Melt butter in a saucepan;
add flour and cook over low heat 1 or 2 minutes, stirring constantly.\tAdd
milk
and keep stirring until thick and smooth.
Add
seasoning
and
simmer. To enrich white sauce, combine 1 or 2 egg
yolks with 1 tablespoon sauce and add, beating well while sauce is hot.
You may thin sauce to desired consistency by adding a little hot milk. This sauce may be used in ala king,
macaroni,
cream
soup or whenever cream sauce is called for.
