Cinnamon Cucumber Rings - cooking recipe

Ingredients
    2 gal. cucumbers
    2 c. lime
    8 1/2 qt. water
    2 c. vinegar
    1 c. red hots
    10 c. sugar
    2 c. water
    8 cinnamon sticks
    1 c. cider vinegar
    1 Tbsp. alum
    1 bottle red food coloring
Preparation
    Let the cucumbers get big and turn yellow.
    Peel and cut large yellow cucumbers in half.
    Scoop out seeds with a spoon, creating a cup of each half.
    Cut them to make ring slices about 1/2-inch thick.
    Put these to soak in the 8 1/2 quarts water and lime solution for 24 hours.
    Drain and wash well with clear water. Cover with cold water; soak for 3 hours.
    Drain.
