Sugar Free Apple Pecan Muffins - cooking recipe
Ingredients

1 c. unbleached flour
1 c. whole wheat flour
1/2 c. sugar
3 tsp. baking powder
1 tsp. cinnamon
1 tsp. lemon zest
2 eggs
1/3 c. oil
1 c. finely diced apples
1/3 c. chopped pecans
Preparation

Combine sugar, flour, baking powder, cinnamon and lemon zest in mixing bowls.
Beat eggs with milk in separate bowl.
Combine liquid with dry ingredients only enough to moisten well, then fold in apples and pecans.
Spoon into 12 greased muffin cups and bake in 400\u00b0 oven for 18 to 20 minutes.
