Cottage Cheese And Cold-Cut Platter - cooking recipe
Ingredients

1 lb. creamed cottage cheese
3 Tbsp. green pepper, chopped
1 small carrot, thinly sliced
2 tsp. green onion, thinly sliced
1/4 lb. sliced bologna
1/4 lb. sliced olive and pimento loaf
1/4 lb. sliced sharp Cheddar cheese
Preparation

In medium bowl, combine cottage cheese with green pepper, carrot and onion, mixing well.
Cut bologna slices in half.
Fold olive and pimento slices in half on the diagonal.
Cut cheese slices in half, diagonally.
To assemble, place cottage cheese mixture in center of large, round platter, mounding slightly in center.
Arrange bologna slices, overlapping around cottage cheese mixture.
Arrange olive and pimento slices around edge of platter; top with cheese slices.
Refrigerate until ready to serve.
Just before serving, sprinkle cottage cheese mixture with parsley. Makes 6 servings.
