New Orleans Style Red Beans - cooking recipe
Ingredients

1 lb. red beans
1 lb. lean ham, cut into small pieces (boneless ham hocks are good)
1 stalk celery, chopped
1 Tbsp. vinegar
red pepper sauce to taste
salt to taste (if needed)
1 clove garlic
rice, cooked per pkg. directions
1/2 c. parsley
1/2 lb. salt pork or fat back, chopped
1 small onion
2 large bay leaves, broken
1/2 tsp. chili pepper
1/2 c. bell pepper, chopped
Preparation

Wash beans; place in large heavy pot.
Cover with water; cook over low heat for one hour.
Fry salt pork.
Add onion, garlic, celery and bell pepper.
Cook over low heat about five minutes. Remove from heat and add all remaining ingredients except parsley and vinegar.
Cook an additional hour over very low heat.
Add vinegar and parsley.
Let cook on stove for a few hours.
Taste and add additional seasoning, if necessary.
Serve over rice.
