Veal Special - cooking recipe

Ingredients
    4 slices veal
    1 c. beef broth
    juice of 1 lemon
    3 Tbsp. butter
    1 small can mushrooms
    1 Tbsp. cornstarch
    4 tomato slices
    4 slices Swiss cheese
Preparation
    Pound veal steaks thin.
    Dip in egg and Ritz cracker crumbs. Brown quickly in hot skillet.
    Place in ovenproof dish.
    Top veal with tomato slices.
    Combine broth, butter, lemon juice, mushrooms, salt and pepper. Simmer and thicken with cornstarch. Pour over veal and cover. Refrigerate.
    Can be made the day before. Bake, covered, for 40 minutes at 350\u00b0.
    Remove. Top with cheese. Bake until cheese melts.
    May substitute chicken breasts.
