Ingredients

4 large (30 oz.) cans Sugary Sam yams
2 c. sugar (I use only 1 or 1 1/4 c.)
5 eggs
1/2 tsp. salt
1 Tbsp. vanilla
3 or 4 tsp. nutmeg (I use 2 Tbsp.)
1/2 c. milk (Pet evaporated milk is okay)
1/2 stick margarine
1 c. pecans, chopped
Preparation

Drain yams and mash with potato masher.
In separate bowl, beat eggs.
Add sugar, milk, nutmeg, salt and vanilla.
Mix into potatoes, then add pecans and butter.
Mix well, then bake in large rectangular Pyrex baking dish.
Fills two 2-quart baking dishes.
Bake at 350\u00b0 until done and lightly browned on top, approximately 30 minutes.
