Crackling Cornbread - cooking recipe

1 1/2 c. cornmeal
1/2 c. all-purpose flour
1/2 tsp. soda
1/2 tsp. salt
1 c. buttermilk
2 eggs, beaten
2 Tbsp. vegetable oil
2 c. shredded Cheddar cheese
1 (8 oz.) can cream-style corn
1 small chopped onion
2 c. cracklings
2 Tbsp. pimento, chopped
Preparation

Combine first 4 ingredients; mix well.
Add milk, eggs and vegetable oil; stir well.
Stir in remaining ingredients; mix well.
Pour batter into a greased 10-inch cast-iron skillet.
Bake at 350\u00b0 for 30 to 35 minutes or until lightly browned.
Yield: 8 servings.
