Apricot Delight - cooking recipe

Ingredients
    1/2 lb. dried apricots
    1 c. water
    2 c. sugar
    5 egg yolks
    1 Tbsp. butter
    grated coconut
Preparation
    Steam dried apricots in water.
    Add sugar and slightly beaten egg yolks.
    Cook over low heat, stirring constantly, with a wooden spoon until the mixture falls away from sides of saucepan (234\u00b0 to 238\u00b0).
    Remove from heat; beat in the butter and allow to dry overnight.
    Next day, shape into small balls and roll in coconut. Yields 50.
