Low Calorie Fettuccine Alfredo - cooking recipe

Ingredients
    1 c. low-fat cottage cheese
    1 c. low-fat milk (1%)
    1 egg yolk
    1/2 tsp. fresh ground pepper
    2 Tbsp. butter
    1/2 c. grated Parmesan cheese (hold back 4 tsp.)
    8 oz. fettuccine noodles
Preparation
    In blender, combine cottage cheese, milk, egg yolk and pepper. Puree until smooth.
    In a small saucepan, melt butter over low heat.
    Add puree and bring to a simmer, stirring occasionally. Stir in all but the 4 teaspoons of Parmesan cheese.
    Meanwhile, cook noodles according to directions; drain.
    Toss with sauce. Sprinkle with the remaining cheese.
    Contains 355 calories per serving.
    Serves 4.
