Curried Chicken And Apple Salad - cooking recipe
Ingredients

1 (8 oz.) carton plain fat-free yogurt
1/4 c. chutney
1 tsp. curry powder
2 c. chopped cooked chicken or turkey
1 1/2 c. sliced celery
1 medium apple, cored and cut into chunks
1/4 c. sliced green onions
purple kale and/or red-tipped lettuce leaves
Preparation

In a medium mixing bowl, stir together yogurt, chutney and curry powder. Stir in chicken or turkey, celery, apple and green onions. Cover and refrigerate for at least 4 hours and up to 6 hours. Before serving, stir chicken mixture. Serve on 4 kale and/or lettuce-lined plates. Makes 4 servings.
