Old Fashioned Lemon Pie - cooking recipe

Ingredients
    1 lemon
    1 1/2 c. sugar
    5 1/2 Tbsp. cornstarch
    1 1/2 c. hot water
    3 beaten egg yolks
    3 Tbsp. butter
    4 Tbsp. lemon juice
    1 1/2 Tbsp. grated rind zest
    3 beaten egg whites
    1/4 c. sugar
Preparation
    Squeeze juice from a lemon.
    Recipe uses 4 tablespoons lemon juice.
    Grate lemon rind outer skin to get 1 1/2 tablespoons grated zest.
    In heavy saucepan, put 1 1/2 cups sugar, cornstarch and hot water.
    Cook, stirring constantly until mixture boils and thickens. Remove from heat.
    Beat 1/2 cup mixture into 3 beaten egg yolks. Add to hot mixture.
    Blend in butter, lemon juice and grated rind zest.
    Bring to boil.
    Pour into baked 9-inch pie shell.
    Top with meringue of 3 beaten egg whites with 1/4 cup sugar.
    Beat egg whites and sugar until not grainy when tested by rubbing between fingers.
    Brown in hot oven.
    Watch carefully so it won't burn.
