Potato Pancakes - cooking recipe

Ingredients
    5 c. raw potatoes (1/2-inch cubes)
    1 c. soy or nut milk
    1 1/2 tsp. onion powder
    1/2 tsp. garlic powder
    1 1/4 tsp. salt
    2 Tbsp. olive oil
    5 Tbsp. freshly minced parsley
Preparation
    Steam potatoes
    in
    two
    inches
    of water until tender. Drain. Add remaining ingredients and mash until smooth.
    Form into patties
    1/4-inch
    thick.
    Place
    on sprayed cookie sheet and bake at
    400\u00b0 for 40 minutes, turning once.
    Pancakes are done when browned.
    Yields 9 pancakes.
