Spaghetti Sauce - cooking recipe

Ingredients
    3 (14 oz.) cans diced tomatoes
    2 (6 oz.) cans tomato paste
    1 (8 oz.) can tomato sauce
    1 medium onion (white or yellow)
    5 cloves garlic
    3/4 c. red or cooking wine
    1/2 tsp. thyme
    2 bay leaves, crushed
    1/4 tsp. sage
    1 Tbsp. oregano
    1 c. water
    1 Tbsp. soy sauce
    1 lb. Polish or German sausage
    1 lb. fresh mushrooms
    salt and pepper to taste
    sugar
    1 lb. hamburger or deer meat
    3 oz. Mozzarella cheese
Preparation
    Place all tomatoes in a large cooking pot.
    Cut up onion and garlic; simmer in olive oil until they just begin to smell (be careful not to overcook these!).
    Place garlic and onion in cooking pot.
    Add next 10 ingredients (wine through salt and pepper) to cooking pot.
    With so many tomatoes, there will be an acid taste, so add just enough sugar to balance it out.
    Bring sauce to a quick boil for 5 minutes, stirring often.
    Lower the temperature; simmer for 1 to 2 hours.
