Rhode Island Johnnycakes - cooking recipe
Ingredients

1 c. white corn meal
3/4 tsp. salt
1 c. water
1/2 c. milk
bacon drippings
Preparation

Put corn meal and salt into medium size mixing bowl.
Bring water to boil.
Let boiling water dribble onto corn meal while stirring constantly, then stir milk into mixture; it will be fairly thick, not runny.
Heat griddle or heavy skillet and grease generously with bacon drippings.
Drop the batter by spoonfuls onto griddle.
Flatten them with spoon or spatula to 1/4-inch. Fry until brown, then turn and brown on other side.
Serve with maple syrup.
Makes 4 servings.
