Ingredients
1 1/2 lb. lean pork, cubed
2 Tbsp. shortening (I use Pam instead)
    1 chicken bouillon cube
1 (20 oz.) can pineapple chunks
    1/4 c. brown sugar
    2 Tbsp. cornstarch
    1/4 c. vinegar
    1 Tbsp. soy sauce
    1/2 tsp. salt (optional)
1 medium green pepper, cut into strips
    1/4 c. thinly sliced onion
    hot, cooked rice
Preparation
Brown pork in shortening or Pam.
Add 1 cup water, bouillon cube and 1/4 teaspoon salt; mix well.
Cover and simmer until tender, about 1 hour.
    Meanwhile, drain pineapple, reserving syrup.
Combine brown sugar and cornstarch; add reserved pineapple syrup, vinegar, soy sauce and 1/4 teaspoon salt.
Cook and stir over medium heat until thickened.
Remove from heat; add sauce and pork.
    Mix well.
Stir in pineapple, green pepper and onion.
Cook about 3 minutes more or until vegetables are tender.
    Serve over hot rice.
    Makes 6 servings.
