Rice Cheese Souffle - cooking recipe

Ingredients
    1 c. cooked rice
    2 Tbsp. flour
    1/2 c. grated cheese
    2 Tbsp. melted butter
    1/2 c. milk
    3 eggs
    salt
    cayenne
Preparation
    Combine butter, flour and milk.
    Cook over hot water until smooth and thick.
    Add well beaten egg yolks and rice.
    Cook 5 minutes.
    Remove from fire.
    Add cheese.
    Mix until cheese is melted.
    Season with salt and cayenne.
    Cool.
    Fold in stiffly beaten egg whites.
    Pour into well-oiled casserole.
    Bake in moderate oven (375\u00b0) for 20 minutes.
