Chicken Breast Mandalay - cooking recipe
Ingredients

4 chicken breasts, boned (about 12 oz. each)
3 Tbsp. flour
1 Tbsp. curry powder
2 tsp. salt
1 Tbsp. sugar
2 envelopes instant beef broth or 2 beef bouillon cubes
1 c. water
1 large onion, chopped (1 c.)
1 (5 oz.) jar baking apricots
2 Tbsp. lemon juice
2 tsp. soy sauce
1 c. mushrooms
Preparation

Shake breasts in bag with mixtures of flour, curry and salt. Brown in vegetable oil and remove from pan.
Stir in soy sauce, bouillon, onion, water, apricots, lemon juice and sugar in pan in drippings.
Heat to boiling.
Pour over chicken that has been removed and placed into casserole.
You can prepare to this point ahead of time and refrigerate.
Bake, covered, in 350\u00b0 oven for 1 1/2 hours; serve over rice.
Great company dish can be made ahead of time.
