Spanish Rice(Potluck Favorite) - cooking recipe

Ingredients
    6 slices bacon
    1 c. uncooked regular or brown rice
    1/4 c. chopped green pepper
    1 medium onion, sliced
    1 tsp. salt
    1/8 tsp. pepper
    2 c. water
    16 oz. (2 cups) tomatoes, undrained and cut up
Preparation
    In a large skillet, fry bacon until crisp. Drain on paper towel. Reserve 2 tablespoons drippings. Cook rice, onion and green pepper in drippings until onion is tender.
    Add crumbled bacon and remaining ingredients.
    Simmer, covered, 30 to 40 minutes or until rice is tender and liquid is absorbed.
    Serves 5 to 6.
