Mediterranean Chicken - cooking recipe
Ingredients

1 Tbsp. olive oil
6 skinless chicken breasts
2 c. Mozzarella cheese
3 1/2 c. zucchini, sliced
6 large tomatoes, sliced
1 small bunch fresh basil or oregano
pepper
rice or pasta (good with Tri Color Rotini pasta)
Preparation

Prepare six pieces of foil about 10 inches long.
Brush foil with oil and set-aside.
Slash each chicken breast with knife at intervals.
Put Mozzarella cheese in the cuts. Divide the zucchini and tomato slices between the pieces of foil and sprinkle with black pepper.
Tear or roughly chop the basil or oregano and scatter over the vegetables.
Put chicken on top of vegetables and fold and wrap the foil around the food.
Place in a baking pan. Preheat oven to 400\u00b0 and cook approximately 1 hour or until chicken is cooked.
Serve over rice or pasta.
