Pina Colada Muffins - cooking recipe

Ingredients
    1/4 c. butter, softened
    1/2 c. sugar
    1 large egg
    1 1/2 c. all-purpose flour
    1 tsp. baking powder
    1/2 tsp. soda
    1/2 tsp. salt
    1 (8 oz.) carton sour cream
    1 (8 oz.) can crushed pineapple, drained
    1/2 c. flaked coconut
    2 tsp. rum extract
Preparation
    Preheat oven to 350\u00b0.
    Grease muffin pans.
    Beat butter at medium mixer speed until creamy.
    Gradually add sugar, beating well.
    Add egg; beat well.
    Combine flour, baking powder, soda and salt; add to butter mixture alternately with sour cream, beginning and ending with flour mixture.
    Mix after each addition.
    Stir in pineapple, coconut and rum extract.
    Spoon batter into greased muffin pans, filling about 3/4 full.
    Sprinkle batter with sugar and bake at 350\u00b0 for 20 minutes.
    Makes 1 1/2 dozen.
