Pan-Fry Smelts - cooking recipe

Ingredients
    smelts
    flour, salt and pepper, mixed
    1 egg, beaten
    seasoned breadcrumbs
    oil
Preparation
    Dip each smelt in flour.
    Dip in egg.
    Dip in breadcrumbs.
    Let dry on a rack for a few minutes.
    Fry a few at a time in oil.
    Fry for 2 minutes.
    Turn and fry for 2 minutes more.
