Cranberry Crunch - cooking recipe
Ingredients

1 (12 to 16 oz.) bag fresh cranberries
1 (12 oz.) jar orange marmalade
grated rind or 1 orange (optional)
4 oz. crystallized ginger, cut into long slivers
1 c. sugar
1 c. coarsely chopped pecans
Preparation

Place berries in long, flat Pyrex casserole dish and sprinkle the sugar on top. Seal with foil and cook in 350\u00b0 oven for approximately 25 minutes (berries should pop open when done). Stir to dissolve sugar. Stir in marmalade, ginger and nuts while berries are hot. Makes approximately 1 quart.
