Special Fried Rice - cooking recipe

Ingredients
    2 3/4 c. water
    3 Tbsp. vegetable or wok oil
    2 cloves garlic, chopped
    1/2 c. shredded carrots
    4 scallions, thinly sliced
    1/3 c. tamari (dark aged soy sauce)
    1 1/2 c. white rice
    2 eggs, beaten
    2-inches fresh ginger, minced
    1 small red bell pepper, diced
    1/2 c. frozen peas
Preparation
    Bring water to boil. Add rice; reduce heat. Cover and cook over medium 15 to 18 minutes. Spread rice out on a cookie sheet to quick cool it.
