Ingredients

6 c. peeled grated zucchini
6 c. sugar
1 orange rind, grated
1/2 c. lemon juice
1 lemon rind, grated
1 small can crushed pineapple, drained
1 (3 oz.) box orange jello
Preparation

Simmer first 5 ingredients until thickened; add pineapple and cook 5 minutes more.
Remove from heat.
Add jello, stirring well. Pour into hot clean jars and seal.
Makes 8 cups.
