Butternut Squash With Apples And Maple Syrup(Serves Large Group - About 20) - cooking recipe

Ingredients
    1 stick butter
    3/4 c. pure maple syrup
    1/4 c. apple juice
    1 tsp. cinnamon
    1/2 tsp. ground allspice
    1/2 tsp. salt
    3 small butternut squash, peeled, halved, seeded and cut crosswise into 1/2-inch slices
    4 Granny Smith apples, peeled, halved, cored and cut into 1/4-inch slices
Preparation
    Preheat oven to 400\u00b0. Butter 9 x 13-inch baking dish. Stir butter, syrup and apple juice in small saucepan on medium-low heat until butter melts. Increase heat and boil about 5 minutes. Remove from heat. Whisk in cinnamon, allspice and salt. Arrange 1/3 of squash in dish; top with 1/2 of apple slices. Add another 1/3 of squash. Arrange remaining squash and apples on top. Sprinkle lightly with salt and pepper. Cover tightly with foil. Bake about 50 minutes or until squash is almost tender. Uncover and bake until tender, basting with syrup, about 20 minutes. Spoon syrup over mixture and serve.
