Corn Fritters - cooking recipe
Ingredients

2 eggs, separated
1 c. fresh corn kernels or use 2 c. canned or frozen corn
4 Tbsp. all-purpose flour
1/2 tsp. salt
ground black pepper
lard (for deep frying)
Preparation

Combine the egg yolks, flour, salt and pepper in a medium size mixing bowl.
In a separate bowl, beat the egg whites into the yolk mixture.
In a deep skillet, melt the lard to a depth of 3-inches and heat it until it registers a temperature of 365\u00b0 on a deep fat thermometer.
Drop the fritter batter into the fat by teaspoonfuls, making them all nearly the same shape and size.
Fry until golden brown, about 3 to 4 minutes.
Drain well.
Serve immediately. Makes 18 fritters.
