Carrot Cake - cooking recipe
Ingredients

2 c. flour
2 tsp. baking powder
1 1/2 tsp. baking soda
2 tsp. cinnamon
1 1/2 tsp. salt
2 c. sugar
1 1/2 c. oil (canola)
4 eggs
1 Tbsp. vanilla
2 to 3 c. grated carrots
1 (8 oz.) can crushed pineapple, drained
1 1/2 c. chopped walnuts
1/2 c. white raisins
1/2 c. coconut
Preparation

Preheat oven to 350\u00b0.
Combine the first 6 ingredients in a bowl.
In a 2nd bowl, combine the next 3 ingredients.
Mix both bowls together and add carrots and pineapple.
Mix well; add the rest of the ingredients.
Blend well; bake at 350\u00b0 for 30 to 40 minutes.
Makes 3 (8 or 9-inch) round or one 13 x 9-inch.
