Zucchini Pepperoni Casserole - cooking recipe
Ingredients

4 c. zucchini, chopped
1/2 c. onion, chopped
2 c. Mozzarella cheese, shredded
2 Tbsp. Parmesan cheese
3/4 c. pepperoni (small chunks)
1/4 c. oil
4 eggs, slightly beaten
1 c. Bisquick
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. basil
1/2 tsp. oregano
Preparation

Preheat oven to 350\u00b0.
Spray 9 x 13-inch pan with no-stick spray.
Combine zucchini, onion, cheeses, pepperoni and spices in a large bowl.
In another bowl combine eggs, oil and Bisquick. Add to zucchini mixture and stir well until all ingredients are coated.
Spread in prepared baking dish.
Bake 35 to 40 minutes, or until lightly browned.
Serve with marinara sauce or spaghetti sauce on the side.
