Polynesian Wedding Cake - cooking recipe
Ingredients

1 1/4 c. corn oil
2 c. sugar
3 eggs
2 c. sifted flour
2 c. shredded carrots
1 c. chopped nuts
3/4 small bag coconut, (4 oz. shredded, divided use)
1 small can crushed pineapple
2 tsp. cinnamon
2 tsp. baking soda
2 tsp. vanilla
1 tsp. salt
Preparation

Combine all ingredients into large mixing bowl; mix with wooden spoon. Do not use mixer. Put batter in a greased spring form pan and bake on the bottom shelf of oven at 350\u00b0 for 1 hour and 20 minutes or bake for 60 minutes in 9 x 13-inch, greased pan. Cool and refrigerate overnight. Frost next day.
