Watermelon Rind Preserves - cooking recipe

Ingredients
    2 lb. prepared rind
    2 lb. sugar
    1 lemon
Preparation
    Trim green skin and red flesh from thick rind.
    Cut into 1-inch cubes.
    Cover with water.
    Boil until fork-tender.
    Drain. Add sugar to 7 cups water.
    Boil 5 minutes.
    Cool.
    Add rind to syrup.
    Boil 30 minutes.
    Add lemon, thinly slices.
    Continue cooking until rind is clear.
    Pack into hot jars.
    Process pints and quarts 20 minutes at simmering (180\u00b0 to 185\u00b0) in hot water bath.
