Home Cookin' Spinach Cornbread - cooking recipe

Ingredients
    1 pkg. Jiffy cornbread mix (or similar brand)
    1 small box frozen chopped spinach, slightly defrosted
    1 small onion, chopped (optional)
    1 stick butter or margarine, melted
    1/4 tsp. salt
    4 eggs, slightly beaten
    1 small carton cottage cheese
Preparation
    Mix ingredients in large bowl.
    Pour into a greased 10-inch square Pyrex dish.
    Bake 30 to 40 minutes in preheated 400\u00b0 oven. (Makes a thick, cake-like bread, great with soups.)
