Ingredients

2 c. flour
2 c. boiling milk
3 1/2 oz. yeast
1 1/4 c. lukewarm milk
6 egg yolks
1/2 c. sugar
1/2 vanilla bean, ground
1 to 2 tsp. orange rind
1/4 lb. butter, melted

jam
deep fat (for frying)
Preparation

Sift 1 cup flour into boiling milk; remove from heat and beat until smooth.
Let cool.
Dissolve yeast in the 1/4 cup milk.
Add to flour mixture; stir and let stand a half an hour.
