Green Pepper Casserole - cooking recipe
Ingredients

1 c. rice, uncooked
2 Tbsp. butter or margarine, melted
3 green peppers, cut in strips
4 chicken bouillon cubes
2 c. water, boiling
1 lb. ground beef
3/4 c. onion, chopped
1 garlic clove, minced
3/4 c. celery, chopped
1 15 oz. can tomato puree
1 tsp. oregano
1 tsp. salt
1/4 tsp. pepper
1 1/2 c. cheddar cheese, shredded
Preparation

Cook rice in melted butter in skillet until lightly toasted, stirring frequently.
Spread in greased baking dish.
Arrange green pepper on top.
Dissolve bouillon cubes in boiling water; pour over rice mixture.
Cover with foil.
Bake at 375\u00b0 for 20 minutes.
Meanwhile, cook ground beef, onion, celery, and garlic in skillet until meat is browned.
Stir in tomato puree, oregano, salt, and pepper.
Simmer covered for 5 minutes.
Pour over rice mixture.
Cover with foil.
Continue baking for 15 minutes. Remove cover, sprinkle with cheese and bake, uncovered, for 5 minutes.
