Canadian Cheese Soup - cooking recipe

Ingredients
    1/2 stick margarine
    1/2 c. onion, finely diced
    1/2 c. carrot, finely diced
    1/2 c. celery, finely diced
    1/4 c. flour
    1 1/2 Tbsp. cornstarch
    4 c. chicken stock
    4 c. milk
    1/8 tsp. soda
    2 c. shredded Cheddar cheese
Preparation
    Melt margarine in soup pot.
    Add onion, carrot and celery and saute until soft.
    Add flour and cornstarch and cook until bubbly. Add chicken stock and milk, stirring until smooth.
    Add soda and Cheddar cheese, stirring until a smooth blend.
    Taste for seasoning; add salt and pepper if needed.
    About 15 minutes before serving, stir in 1 cup of beer.
